This is my adaptation from a pancake recipe on www.newdiets.com
Pancakes
Ingredients
* 2 c sorghum flour ( I use brown rice flour)
* 3 tsp baking powder
* 1 tsp sugar (I use honey)
* 3/4 tsp salt
* 1/2 c non-fat dry powered milk or powdered buttermilk (I made a cashew nut milk)
* 1 T oil
* 3 eggs
* 1 1/2 c water
Directions
1. Combine dry ingredients.
2. Stir in eggs, oil and water and mix well.
3. Drop by spoonfuls onto a hot, 375° griddle until golden brown, turning once.
4. Makes about 20 4" pancakes.
If you like thinner pancakes add more water, or add some applesauce.

Does sorghum flour have gluten? I've seen it listed on products labled "gluten-free.."

Sorghum flour must be gf because I found the recipe on a GF/CF website....I've never used it before, though.
