What is your favorite GF/CF recipe?

Hi-
Well, we have just switched back to gf/cf after trying SCD for 7 months for the second time with no improvements (plus a potential ammonia problem due to excess protein)....

So, I'm now needing some new gf/cf recipes to add to Wynn's diet.  I'm still staying away from corn and soy, but am willing to try some other grains.  What do your kids love?

that has a really easy waffle recipe that is quite yummy....

Basic Rice Flour Waffles (or other grains)

Great crispy, and good plain. Make small batches to keep the baking powder active.

Makes 4 great waffles.
Ingredients

    * 1 cup of rice flour ( I used a combination of brown rice, quinoa, buckwheat and amaranth flour)
    * 1 teaspoon of Featherweight Baking Powder
    * 1 whole egg
    * 1 tablespoon oil
    * 1/2 cup liquid ( I just used water)
    * 1-tablespoon powdered milk substitute, calcium or protein powder  ( I used some of that SCD goat's milk yogurt I cultured last week)
    * 1-tablespoon vinegar or lemon juice  (skipped it and added 1 T. honey instead)

Directions

   1. Heat waffle iron
   2. Mix ingredients well
   3. Cook until golden brown

Variations:

   1. Flour Variations: bean or grain varieties
   2. Add ¼ cup chopped fresh or dried fruit
   3. Substitute fruit/vegetable juices for liquid
   4. Add nuts, chocolate chips, or carob milk powder
   5. Add herbs: savory or sweet combinations
   6. Add different sweeteners for dessert type waffles
   7. Add ¼ cup cooked, mashed vegetables - plus liquid to correct consistency

I do a lot of low carb bowls like rice, chicken, brocolli and onions with glutten free BBQ sauce for a kick. I used brown rice, my son loves it.
I do a hamburger bowl with glutten free noodles, jenny o" turkey burger ground up, onions and ketchup
And a tuna salad plate with lettece, tuna, onion, broccoli lite italian dressing

TO get a good texture to your waffles, mix gluten free flours half and half, use almond vanilla milk if you can makes them extra yummy!

We tried a honey dijon chicken w/ rice that I thought was really good.  Of course sub the milk/butter.

6 tablespoons Dijon mustard
1/4 cup honey
1/4 cup orange juice
2 tablespoons milk
2 tablespoons butter
2 teaspoons lemon juice, to taste
1/4 teaspoon ground mustard (optional)
1/4 teaspoon salt
1 dash ground black pepper
1/2 cup chopped pecans
6 skinless, boneless chicken breast halves

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
In a medium saucepan over medium heat, blend the Dijon mustard, honey, orange juice, milk, butter, and lemon juice. Season with ground mustard, salt, and pepper. Stir in the pecans.
Arrange chicken in the prepared baking dish, and cook in the preheated oven about 10 minutes. Cover with the Dijon mustard mixture, and continue cooking 20 minutes, or until chicken is no longer pink and juices run clear.
