ZUCCHINI NOODLES

Use a potato peeler to create noodle-like strips of zucchini (summer squash would work fine also).
Saute in olive oil for 1-3 minutes.
Use with regular and non-dairy versions of pesto sauce at the SCD recipe site, or in "spaghetti" and meatballs .

I really liked these, my son turned up his nose but the rest of us thought they were good!
