Ok, I confess, I should be in my kitchen right now making cultured veggies and I don't want to. LOL I totally need a cook! (Don't we all???)

I've heard that there is so much good nutrition and probiotics in cultured veggies. My family really like sauerkraut--so I think they would like other cultured veggies. What kind do you make? It is a time-consuming process? Do your kids like them?

I make a few different recipes. We are very limited on what we can culture due to food allergies (everyone's allergic to something different! lol) I make the following blends:
cabbage, carrots, onion, garlic, broccoli - this is REALLY savory and delicious. I'm salivating just describing them! lol
cabbage, carrots, onions, garlic, beets - my son prefers these but they are VERY tart. THey're good for liver cleansing
cabbage, wakame, kale, dill - this is almost a pickly taste. I actually think they taste exactly like pickles but friends of mine who eat normal food said it doesn't. lol This is my middle daughters favorite blend.
It takes about 1 1/2 hours start to finish. I have on occassion broken it up and cut up the stuff and saved it for the next day to shred and culture. I get about 5 quarts every time - and we eat about 1 quart a day. I normally do it after the kids are in bed b/c one of my kids is allergic to cabbage so I just prefer to do it when I can thoroughly clean up without interruption.

i have not used the diet however right my neighbor hood is a published auther and mom on the this diet her name is wendy i know she has a fee but it sounds like it is worth it to get her on board i will post later when i find her web info.

We're almost ready to start trying some of your recipes. I bought a jar of the fermented cabbage at the health food store and my son loved it and ate the whole jar...I will need to make my own, though, because the 12 oz. jar cost over 6 dollars!
