Fermented vegetables for gut healing/good probiotics

Hi-
Just watched this great youtube video about fermented veggies for healing the gut.....
Really well done, very informational and professional....an MD and parent.

I saw this video recently and was really impressed.  I just don't know how to do the fermented veggies.  I know BED has a starter....Has anyone tried this who could give some instruction?

I think I not only need to know how to do it--but probably how to hide them in the foods they are eating too!

I recommend www.bedrokcommunity.org site where all of us on there are trying to get fermented foods in our kiddies.  As I type, I have 6 jars of cultured veggies fermenting in my cupboard and three already done in the fridge; so we are BIG fans of fermented foods!   I am happy to help anyone learn how to make them but my time is very limited while hubby is overseas and you may get answers faster on that site. smile  I will try to check in again tomorrow but if I take a few days to get back to you, definately check out the message board on the bedrokcommunity site.  They've set it up to be easily navigated and we're ALL in a learning process so no questions are too basic.

Are there any cookbooks that would have recipes for this?  I saw there was a veggir cookbook on the BED website but didn't know if that would be in there.  Do you know if that cookbook (The Versatile Vegetable) is any good?  I am looking for ways to get veggies in my very picky kids!

Kristin,  I had a chance to look thru that book VERY briefly at the DAN! conference and I don't remember if there are CV recipes in there.  Lots of good recipes in there, but not what I would think a beginner would use.  The Body Ecology book has directions for making fermented foods/drinks, but so does their website and the bedrokcommunity website.  In fact, do go look around the bedrokcommunity site and read the message board.  There are some amazing moms who can get anything into their kids!!  smile
