This recipe is very quick and easy, but only works for a bottom crust that is to cooked before the filling is added. It is tasty..similar to a thin cookie. I like to bake it and then fill it with cooked apples seasoned with a little brown sugar and cinnamon.
* 3/4 cup rice flour
* 1 teaspoon honey
* 1/4 teaspoon sea salt
* 1/2 teaspoon xanthan gum
* 1/3 cup vegetable oil
* 2 tablespoons cold water
Directions
1. Stir dry ingredients together, making sure xanthan gum is evenly distributed.
2. Cut in butter or oil and add honey.
3. Add cold water a little at a time until a ball is formed.
4. Pat in the bottom and sides of a pie pan.
5. Bake in preheated 350 degree oven for about 15 minutes or until golden brown.
6. Let cool and then add filling of choice.

I use a flour recipe I found on http://www.recipezaar.com/
3 cups rice flour
1 cup potato or corn starch
1/2 cup tapioca flour
1 Tablespoon xanthan gum or guar gum
So far it's worked on every quick bread recipe I've tried, except the chia seed muffins.
For unbaked pie crust I use:
2 cups flour
1 Tablespoon sugar (1 teaspoon for meat pies)
3/4 cup clarified butter (ghee)
4-6 Tablespoons water
Stir flour & sugar together. Cut in Butter. Stir in water. Chill. Roll. Makes 2 9" deep dish bottom crusts.
