Oh, and I meant to say with both the boys they LOVE things like fruit/veggie breads, so I try to make banana bread, apple muffins, pumpkin or sweet potato bread, zucchini bread, etc. I've thought about making carrot cake for them as well, but haven't tried it.

We have severe eating issues. He will not eat any table food veggies, but no problem eating purees. Sooo I put the actual veggie on his plate but feed him the puree. We do work on it in Oral motor therapy and gaining a little ground he did take a bite out of a baby carrot without promting so we are getting somewhere.

Daniel will eat tomato spaghetti sauce, but only cold (!) cooked corn, but not with butter, the tips of raw asparagus, the buds off the raw broccoli, raw carrots, raw cauliflower, raw red cabbage (not green), raw spinach, and the occasional leaf of lettuce, but only one. Oh, and raw celery. He used to eat maple leaves, dandelion flowers and roses, but has stopped now. Whatever. I'll count those as veggies.

Mine aren't great with veggies, although Mitchell (4) will eat corn sometimes. BUT, he at least eats lots of fruits. Owen, on the other hand, has lots of oral texture issues, and anything he eats has to be dry and/or crunchy. Like, he'll eat most types of bread product, like the Nutrigrain bars with fruit in them, but won't actually eat the fruit by itself. We give him a liquid multivitamin to compensate.

My boys are pretty good, I can get them to eat corn, green beans, peas, carrots, butternut squash and some lettuce.
